New Breakfast Fave : Overnight Oats

I have never been the kind of person that could skip breakfast, it's quite possibly my favourite meal of the day. Switching to a whole foods diet however has meant saying goodbye to Croissants, Toast slathered with Jam and Hash Browns. I'm on a mission to find healthy alternatives that taste delicious and keep me going to lunch. 

Enter Overnight Oats. Quick and easy, can be mixed up with any topping and amazingly healthy. Yay. 


  • 1 cup of rolled oats
  • 1 tbsp of pumpkin seeds (or any other seed you have in the cupboard - chia works really well)
  • 2 tsp of cinnamon
  • 1 tsp of nutmeg
  • 1 tsp of vanilla extract
  • 1 tbsp of almonds, crushed or coarsely chopped
  • 2/3 cup of almond milk (unsweetened)

Mix all the ingredients together in a bowl, cover and leave in the fridge overnight. The oats will soak up the liquid and in the morning you can eat cold or heat up with 1/2 a cup of water. 

Have fun with your toppings, here are some suggestions: 

  • A handful of fresh strawberries and chopped walnuts
  • Whipped coconut cream
  • Banana puree
