Cinnamon Quinoa Porridge


It's turning to Autumn here, which means my breakfasts become all about the porridge. I'm also gradually making the switch to clean eating so thought I would make a variation on regular oat porridge. 

It was absolutely delicious and sure to become a firm autumn/winter favourite! 


1 serving

  • 1 cup of quinoa
  • 2 cups of milk (I used unsweetened almond milk)
  • 1 tsp of cinnamon (I actually used more but that's because I LOVE cinnamon)
  • 1/2 tsp of Stevia (you could use rice malt syrup instead)

Heat the quinoa and milk in a saucepan, stirring frequently. Bring to the boil then turn the heat down and simmer. Add the cinnamon and Stevia and continue to simmer until the milk is absorbed. 

I served it with pumpkin seeds and flaked almonds but you could get creative serve with whatever toppings you prefer.
